Kids and their shoes

So today I’m prepping at Biagio’s with Terresa Myslowska. Franklin Kakisingi the kitchen steward shows up with some of the coolest shoes ever. Franklin was completely dressed in black with the gold pimping shoes. I told him all he was missing was a white glove and he’s a Michael Jackson look a like. Here’s a picture of Franklin the MJ lookalike! LOL

New Years 2010

Happy new years!

Well, Mike Ziola from Biagio’s didn’t chose to run my new years eve menu after all, probably for logistic purposes and the fact that it was kind of a last minute idea. I would have loved to prep and execute this menu for him and our guests. I think the ideal sales/marketing technique for a restaurant is to up sell special/coming events in combination with special menus. This needs to be planned several months in advance to get customer buy in.

Service the night of the eve was straight forward, I was working the pasta station. I much prefer working the entree side!

On new years day, I spent the day cooking for my family (The Rochon’s). I served them shaved strip loin, rosemary roasted potatoes and vegetables. They loved it, I enjoyed cooking for them.

I enjoy cooking period!

It’s been a while since I’ve posted anything on the site.
Since moving into the new house, (I still haven’t posted a picture of my lab, aka my home kitchen) I’ve been pretty busy. Home ownership is a job on it’s own.
To top it off, my desktop computer has crapped out. I guess the french saying is true!
“Les cordonniers sont toujours les plus mal chaussés”
Translated means: “The shoe maker always has holly shoes”

IT GUYS = CRAP COMPUTERS
COOKS = EMPTY FRIDGES

This is a trend @ my house! LOL

Last week I got a call from Dominic Dion @ Biagio’s. Dom and I worked together at Biagio’s for a couples months before I took the job @ the Marriott. The holidays season is around the corner and one of the cooks walked out, poor Wilson!!! Dom wanted to know if I could jump in and help him out. Since I don’t have a job in the kitchen and could use the spare money I jumped on the occasion.

So far I’ve worked 3 shifts, on my last shift of the week Mike Ziola the General Manager asked me to look @ his new years menu. I wish I still had a copy of it, regardless I shredded it and came up with my own.

I hope he approves my menu!
Here’s my take on a New Year Menu
